Production process


The Cabernet Sauvignon grapes arrived to the winery in the morning after being mechanically harvested.
The grapes were separated from the stems and after gentle pressing, the must is transferred with the skins and seeds into stainless steel tanks to begin the fermentation. Fermentation is carried out for 7 days at a temperature of 28°C, under different conditions required to generate the color, flavors, and aromas typical of this variety.
After fermentation is complete, the grapes are gently pressed in the pneumatic press and transferred to an insulated stainless steel tank to commence natural malolactic fermentation, which is a fermentation process intended to stabilize and soften the wine.
After completing malolactic fermentation, the wine is transferred to French oak barrels to mature for six months

A vividly colored red wine characterized by its scents of young fruit, particularly cherry and strawberry. Its soft, pleasant body is rich and well-balanced, with a delicate, soft finish.


The Merlot grapes arrived to the winery in the morning after being mechanically harvested.
The grapes were separated from them stems and after a gentle pressing, the must is transferred with the skins and seeds into stainless steel tanks to begin fermentation. The fermentation lasts for 7 days, at a temperature of 26°C, under different conditions required to generate the color, flavors, and aromas typical of this variety.
After fermentation is complete, the grapes are gently pressed in the pneumatic press and transferred to an insulated stainless steel tank to commence natural malolactic fermentation, which is a fermentation process intended to stabilize and soften the wine.
After completing malolactic fermentation, the wine is transferred to French and American oak barrels to mature for six months.

Or Haganuz Har Sinai

This dessert wine is made from Cabernet Sauvignon and Merlot grapes from the winery's vineyards, which reached optimal ripening. It was immediately frozen at the winery in a controlled environment for 3 days. After extraction, the grape juice was warmed over natural olive-wood fire and barrel aged outdoors in French oak for 12 months.

Tasting Note :
The wine is a blend of 80% cabernet sauvignon and 20% merlot ripened grapes. 
Wine has a deep red burgundy color. It has an aroma of raisins, cherries, plums, coffee grains, toasted oak wood and bitter sweet chocolate. The taste is full bodied with a soft complex & an impressive long pleasant finish.

1848 2nd Generation Cabernet Sauvignon/...

Crimson red wine with hints of red fruit, green pepper, black fruits and subtle oak tree withered. Bodied wine with balanced and Relishes long and complex finish.

The vineyard:

the grapes come from vineyards unique mosaic of mature, producing areas in the Galilee, the Judean lowlands and the hills of Jerusalem. Crops are limited and limited water regime donors for quality grapes. Experienced vintners and agronomic continuously monitoring the progress of the vine allow harvest each plot at its peak.

The winemaking:

grapes arrived to the winery in the early morning and coolness were transferred to what "Crusher" directly to stainless steel fermentation tanks cooled. The must was fermented cool temperature of 22-24 PWD to preserve the character of varieties. After the fermentation the wine was aged in barrels Hmlolktit for 10 months. After this period was made from this screen that reflects the combination of noble varieties.

1848 5th Generation Syrah

Deep purple wine with hints of violets, pepper, currants, coconut, vanilla and black currant. Full-bodied and complex, with a long and pleasant.

The vineyard:

Syrah source from Kfar Tavor in the Lower Galilee. A unique mosaic of basalt which are integrated parts of powdered limestone, good exposure to light, cool nights and mild crops allow the vine to express all the aromatic potential of the boat.

The winemaking:

grapes arrived to the winery in the early morning and coolness were transferred to what "Crusher" directly to stainless steel fermentation tanks cooled. After soaking happened three days of gentle extraction of flavors found in the skins of grapes, grape juice fermented at a temperature of 22-24 PWD to preserve the character of the boat. After the fermentation Hmlolktit wine aged in French oak for 14 months, after which the wine is unique, floral , concentrated and strokes.
