The Petit Sirah grapes were harvested mechanically and arrived at the winery in the morning. Following a gentle crush the grapes were transferred into a chilled stainless-steel tank for a day of
Cold soaking prior to the alcoholic fermentation. Upon completion of the cold soaking the alcoholic fermentation process of the Petit Sirah grapes began at a temperature of 28°C while applying different pump-over regimes for the extraction of colors, flavors and aromas.
Following the alcoholic fermentation process, the wine was soaked on the skins for three days. Upon completion of the extended maceration, the grapes were slowly pressed with low pressures, into a Stainless-steel tank for the malolactic fermentation process in order to stabilizes and softens the wine. Upon completion of the malolactic fermentation, the wine started the maturation process in new French oak wooden barrels for 18 months.
Following the maturation period, the wine was bottled and continued to mature for 10 additional months before release to the market.

The Yarden 2T presents bright cherry and cassis fruit notes layered with characters of cocoa, flowers, spice and French oak. An appealing blend of two well-known Portuguese varieties, this attractive wine has good body and nice concentration of flavor.
Tasting Note: The Gamla Nature Cabernet Sauvignon-Merlot displays attractive cherry, orange zest and berry notes, backed by hints of fresh herbs. Equally comprised of Cabernet Sauvignon and Merlot, this complex wine presents medium to heavy body together with satisfying flavor.
Though ready to drink now, Gamla Nature Cabernet Sauvignon-Merlot should improve in the bottle and age gracefully for over five years from vintage. The wine goes wonderfully with lamb chops, a great burger, or crispy thin-crust pizza.

50% Cabernet Sauvignon, 47% Merlot, 2% Petit Verdot, 1% Cabernet Franc
First sorting in the vineyard, manual harvest in crates. Manual destemming berry by berry and use of a sorting table. Transfer into 30-70 hl wooden vats by gravity flow. Low temperature pre-fermentation maceration. Manual punching down. 30-40 day maceration. The wine is run off into French oak barrels by gravity flow. Malolactic fermentation in oak barrels. Aging for 18 months in oak barrels.
Sight: A wine of good density ruby red, with brown, mahogany, biscuit hints. It has maintained its luster and clarity. The rim is fairly thick. The tears are fine, clear, abundant and regular. Smell: At once expressive, forthright and complex. There are notes of all families of fragrance: fruit, flowers, and spices.
The attack is forthright, round and suave, soothing even. The intense aromas initially recall the complexity of the nose. There is leather and lightly charred wood, and roasted notes. The beauty of the vintage is revealed by its elegance rather than its full-flavor. The wine has an attractive aromatic range with a finish of remarkable elegance.
