Tasting Note :
Shiraz is showing a rich complex jammy fruit character harmoniously balanced by earthier notes of tobacco, leather and liquorice. It is a rich powerful wine with soft integrated tannins giving a spicy velvety feel and a long finish.
THE VINEYARDS:
The Grapes for the Reserve Shiraz come from our vineyards throughout the Galilee As Shiraz is a very vigorous variety, much attention is paid to limiting and restricting the fruit yield in order to improve the concentration of flavour and quality of the wine.
WINEMAKING:
Due to the proximity of the vineyards to the winery the grapes were transported to the winery in a matter of minutes after picking. Fermentation lasted 10 days during which time the cap was kept constantly soaked using a rack and return method in order to extract as much colour as possible. After fermentation the wine was transferred to new French oak barrels where I was allowed to mature for about 14 months. In some years we blend in a little bit of Viognier, this adds a velvety texture to the wine. Shiraz has a tendency to become a little stinky and barnyard like during its development, this was not discouraged.

Tasting Note :
The Merlot grapes arrived to the winery in the morning after being mechanically harvested.
The grapes were separated from them stems and after a gentle pressing, the must is transferred with the skins and seeds into stainless steel tanks to begin fermentation. The fermentation lasts for 7 days, at a temperature of 26°C, under different conditions required to generate the color, flavors, and aromas typical of this variety.
After fermentation is complete, the grapes are gently pressed in the pneumatic press and transferred to an insulated stainless steel tank to commence natural malolactic fermentation, which is a fermentation process intended to stabilize and soften the wine.
After completing malolactic fermentation, the wine is transferred to French and American oak barrels to mature for six months.
The source of the grapes used in this wine is from the slopes of the Judean hills, where the roots of these vines must wind their way deep underground in a constant search for life-giving water.
Recanati Cabernet Sauvignon grapes were hand picked, soft pressed, vinified and aged 8 months in French oak barrels. The result is a full-bodied wine with a delicate smoky aroma and hints of spices enhanced by plum and blackberry flavors.
Shiloh Secret Reserve Cabernet Sauvignon 2016 is a luxurious wine a dark red color and aromas of black fruit and cassis. It's a smooth wine, full of flavor and notes of fruit. It's rich bouquet of tobbaco and coffee make for a delightful long finish.

70% Cabernet Sauvignon, 10% Merlot, 12% Petit Verdot, 4% Cabernet Franc, 4% Mourvedre The grapes are from a special 31 years old vineyard, located on the Dalton Plateau area in the upped Galilee, on of the oldest vineyards in Israel, 870 meters high above sea level, it has a yield of 5000Kg/Hecter, soil compsition of limestone and volcanic rock adds special flavors, that are typical to this area. The wine was aged in 225 liter Radoux barrels for 48 months, with the wine being transfered to new barrels again after 24 months. The result is a wine that is exceptionally rich in colour aroma and flavors.
The 2012 Yarden Katzrin is made from 83% Cabernet Sauvignon, 10% Merlot, 5% Petit Verdot, and 2% Malbec fruit grown in vineyards on the Golan Heights. The wine aged as individual lot for
24 months barrel aging.

THE WINE
The 2012 Yarden Katzrin continues our long-running tradition of producing Katzrin wines only in remarkable vintages. The wine presents intense, aromatic and complex notes of ripe black and red fruits, along with hints of black tea, cocoa, aniseed, earth, orange zest and fresh herbs. Full-bodied with concentrated flavor and a lingering finish, this is a special wine for special occasions.
While more than enjoyable to drink now, the wine will improve in the bottle in the coming years, and should remain in great drinking condition for some 15-20 years from harvest.
We recommend serving Yarden Katzrin with rich dishes such as prime rib, roasted leg of lamb with herbs, or duck confit.
THE VINTAGE
Following the record breaking cold and hot temperatures of harvests 2011 and 2010 respectively, we thankfully returned to a more typical vintage in 2012. The relatively cold and wet winter resulted in late but strong budbreak.
A somewhat warm April advanced the season, resulting in a normal start of harvest in the first week of August. Trailing a beautiful summer that was just slightly warmer than average, a short warm spell in October allowed us to complete the relatively short harvest on the 21st of the month. The 2012 vintage brought lower than average yields coupled with very good quality.
First released in 1990, Yarden Katzrin is produced solely in special vintages.
The 2012 Yarden Katzrin is made from 83% Cabernet Sauvignon, 10% Merlot, 5% Petit Verdot, and 2% Malbec fruit grown in vineyards on the Golan Heights. The wine aged as individual lot for
18 months in new French oak barrels; after blending,
the wine aged in the same barrels for another
six months, for a total of 24 months barrel aging.
The 2012 Yarden Katzrin was produced in a limited edition of 54 barrels.
Domaine du Castel
Made exclusively from grapes harvested from a number of our finest Cabernet vineyards on the Golan Heights. The wine aged for 18 months in French oak barrels, 40% of which were new.
An elegant wine, with a rich structure and a long finish: a powerfully classic Cabernet Sauvignon with rich red and dark forest fruit aroma along with a touch of oak, giving the wine firmness and a spicy overlay to the fruit.
100% Marselan grapes
Gentler and lighter in colour than a Rosé. Gris is produced after the grape skins have been macerated for only a few hours, so the wine adsorbs minimal colour and becomes pink with a very gentle flavour.
This is an elegant and refined wine, with a very clear hue between Rosé and White.
61% Cabernet Sauvignon 30% Petit Verdot 3% Merlot 3% Malbec 3% Cabernet Franc This is Carmel’s flagship wine. It is a Bordeaux style blend made in an ‘old world’, elegant style. The grape varieties are Cabernet Sauvignon, Petit Verdot, Merlot, Malbec and a little Cabernet Franc, all from the Upper Galilee. The wine was aged for 15 months in small French oak barrels. Deep purple in color, Carmel Limited Edition has an aroma of black plum, violets, and tobacco leaves. It is full bodied,
The wine is produced under strict controlled conditions from top-quality grapes of the winery, from vineyards in the Upper Galilee (85%) and Kiryat Anavim (15%). The final blend combines vigorous wines made in new oak casks after aging an additional six months, with wines which aged in stainless steel vessels. This combination creates a unique complexity- typical high- quality fruit which emerges from an intense, full body which is then perfected in a bottle.
