A vividly colored red wine characterized by its scents of young fruit, particularly cherry and strawberry. Its soft, pleasant body is rich and well-balanced, with a delicate, soft finish.
The Merlot grapes arrived to the winery in the morning after being mechanically harvested.
The grapes were separated from them stems and after a gentle pressing, the must is transferred with the skins and seeds into stainless steel tanks to begin fermentation. The fermentation lasts for 7 days, at a temperature of 26°C, under different conditions required to generate the color, flavors, and aromas typical of this variety.
After fermentation is complete, the grapes are gently pressed in the pneumatic press and transferred to an insulated stainless steel tank to commence natural malolactic fermentation, which is a fermentation process intended to stabilize and soften the wine.
After completing malolactic fermentation, the wine is transferred to French and American oak barrels to mature for six months.

Style: Golden in color, this pleasant, well-balanced wine exhibits aromas of green apple, apricot, white peach, and grated lemon peel accompanied by characters of butter and toasted nuts. The wine displays a velvety texture and a long and agreeable finish.
Technical Data: Some 80% of the wine underwent cold fermentation in stainless steel tanks, while the remaining 20% fermented in new French oak barrels. The barrel-fermented wine aged on yeast lees for four months. The cold fermentation enabled the wine to preserve the variety’s fresh characters, while wood and yeast notes were developed in the barrelfermented
Harvest: The winter preceding the 2016 harvest began with a heavy snowstorm that provided the grapevines with most of the cold conditions they required. During the rest of the winter there was little precipitation. At the beginning of May, a rainstorm compensated for the lack of precipitation, enabling vine arousal in moist soil. For the remainder of the season, the weather was moderate, even cooler than average, without any extreme conditions.
The fruit ripened uniformly, and the harvest was of a very high quality.

Yatir Forest, the flagship wine of Yatir winery, is made from vineyard produce which yielded the tops wines of a given year’s vintage, with emphasis on scent and palate, and long term aging capability. Yatir Forest has become one of Israel’s leading products of consistent quality, having received a 90 point or higher grade for 9 consecutive seasons in “Wine Advocate”, the admired magazine by wine critic Robert Parker.
The wine is comprised of 65% Cabernet Sauvignon grapes and 35% Petit Verdot. The composition of the varieties varies from one year to the next, depending on the nature of the harvest and in order to accentuate the Yatir character and quality and the uniqueness of the region and its vineyards. The winery’s vineyards are planted on top of slopes in the heart of the Yatir Forest, rising to an altitude of 900 meters above sea level and located just a few minutes’ drive away from the Winery. The forest was planted by the Jewish National Fund (“Kakal”) in 1964 and is the largest planted forest in Israel. The planted grape varieties benefit from ideal conditions for wine-grape growing. The grapes are from several plots in the Yatir Forest, located at an altitude of 650-900 meters, generating wines of the highest quality in a given vintage year. The wine was aged for 14 months in French oak barrels, with a third of them being new. The wine was bottled in Feb. of 2013 and was left to further age at the Winery for an additional period of a year and a half in the bottle. Suitable for further aging for a period of 10 years or more.
Tasting Notes: The wine’s color is deep purple, with a deep aroma and flavors that combine intensity with elegance and freshness.

The story of Segal’s begins in the late 1920s, when brothers Elhanan and Yehezkel Hirsch Segal established Israel’s first distillery in the Tel Aviv colony of Sharona. In 1954 the Hirsch Segal brothers decided to focus exclusively on wine production, naming their property Zvi Vineyard after their beloved grandfather Zvi Hirsch. While the name of the business was eventually changed to Segal’s Wine, the Segal’s label is still in Zvi Hirsch’s handwriting.
